Stress Baking *Now in Quarantine*

Sometimes you just need to bake and cook everything in your kitchen to forget about the global pandemic.

Thanks to Tik Tok, whipped coffee has been a sweeping trend. Self-isolaters everywhere exploring this new coffee drink. The trick with this is instant coffee. Grounds don’t work. Take equal amounts instant coffee, sugar, and hot water and whisk until you get soft peaks. Pour over ice and your milk of choice. My god, this coffee is incredible. Bitter and smooth and sweet all in the same.

Aaaaand because I live in a house with coffee addicts, including myself, we’ve been making our own cold brew coffee. This one needs ground coffee. Take 3/4 grounds and 3 cups water in a large container that can be tightly sealed, like a large mason jar. Shake vigorously and let steep for 12-14 hours. Strain out coffee grounds through a filter or french press. This makes a coffee concentrate. Pour equal amounts coffee and water into a glass and then add milk of choice.

Okay. Coffee out our system, lets move on to fruit bowls. Somehow, in the midsts of all of this we have an abundance of fruits and vegetables. Simply take fruit of your choice (bananas, strawberries, oranges, etc.) slice as desired and top with granola. (Protip: crush/crumble a granola bar if you don’t have lose granola) Drizzle with honey and dig in!

Grilled cheese and tomato soup. I know, we all know how to make grilled cheese but this is my formal reminder. Remember staying home sick from school, or on a snow day, and that grilled cheese and tomato soup just hit. Don’t underestimate the power of a nostalgic meal.
